Baked Pasta
I really like baked pasta :) this one is made with soya cream, peas, corn and beans. Its toped with feta cheese. If the pasta is cooked, bake for 20 minutes at 180 'C (356 F). If not, than for at least 30 minutes.
Avocado tartar
My favorite dinner :) Avocado tartar with whole grain bread.
The tartar is made of avocado, beetroot, a shallot and fresh tomatos. I like to add some rucola salad :) If you like avocado, you should really try this recipe :)

White chocolate mousse
Delicious and super sweet :)
If you want to try you'll need:
- 250g white chocolate
- 3 eggs
- salt
- 460 ml cream
- 1 lime
- peppermint
Seperate the egg yolk from the egg white. Stiffen the egg white with a pinch of salt and put in the freezer. Melt the white chocolate with 80 ml of the cream in a water bath. Once its completely melted let it cool down for at least 5 minutes and mix with the egg yolk. Blend the rest of your cream until its stiff and mix with your chocolate. Fold in your egg white and squeeze in juice from the lime. Put in little desert bowls and cool down in the freezer for at least 3 hours. Use the peppermint as a decoration it harmonises perfectly with the white chocolate and the lime.

Beetroot soup
Beetroot soup. Tastes like christmas :)
- 1 glass of inlaid beetroot pieces
- 1 onion
- cream
- parsley
- salt
-butter
Cut the onion in small pieces and glaze on the butter. Add the beetroot and roast for a few minutes. Blend constantly. Add the cream until the beetroot pieces are covered up. Cook until the beetroot is soft. Take a hand stick mixxer and blend it to a smooth soup. Add salt, pepper and parsley. For the finish you can add more cream and fresh parsley on the top.
Vegan Bolognese
The vegan alternative for a great bolognese sauce on my pasta :)
You'll need:
- 1 onion
- tomato paste
- water
-salt
-oregano
-100 gr red lentils
- flour
-butter
-sugar
Cut the onion in small pieces and roast till its glazed. Add a small piece of butter. When its melted, add a big tablespoon of flour and mixx well. Fill in one glass of cold water and mix frequtnly for 1 minute. Now add the tomato paste till the sauce gets a light red coulour and put in the lentils. Cook for at least 10 minutes and mix constantly. Add one teaspoon of sugar, 2 teaspoons of salt and the oregano. Cook for another minute. Done :)
Red currant muffins
Thats how i like them:
- 150 gr red currants
- 1 egg
- 80 ml oil
- 100 gr sugar
- 150 gr vanilla pudding
- 100 ml milk
- 250 gr flour
- 2 teaspoons baking powder
- 1 pinch of salt
- white choclate
Whisk the egg in a bowl. Add oil, suagr, pudding and milk and mix it to a smooth paste. Mix flour, baking powder and salt and add it slowly to your liquid mass. Blend it till its a plain pastry. Fold in the currents. Put one big spoon of pastry in a form and place a piece of white choclate in the middle. Than add another spoon.
Bake the muffins for 20-25 minutes at 180'C (64.4 F).

Vegan Breakfastwaffles
My sister used to make waffles every day :) since i live alone i havent had them for a looooong time. So this sunday morning waffles were a real pleasure :)
Ingredients:
- 500g flour
- 150g cane sugar
- 2 tablespoons baking powder
- 1 teaspoon salt
- 3 tablespoon oil
- 500ml soya milk
- 100ml sparkling water

Falafel
Falafel are vegetarian snacks originally from egypt. Everyone does them a little differently. Thats how i like them:
- 200g chickpeas
- 1 bunch of parsley
- 1 red onion
- 1 onion
- 1 teaspoon of baking powder
- 4 cloves of garlic
- salt
- oil to fry
- olive oil
You'll need to soak the chickpeas in water for at least 12 hours. Put them in a mixxer with the onions, garlic, olive oil, parsley, baking powder and salt. Mix it until you have a smooth paste. Form little balls, and fry until they get a light brown colour. Its perfect with salad and a joghurt dip.

Prepare just as usual pancakes. :) I love to add fruit salad.
Oreo Cheesecake Muffins
Ever tried Oreo Cheesecake Muffins? Super yummi and the perfect party food :)
You'll need:
- 120g Oreo cookies
- 50g soft butter
- 400g cream cheese
- 90g sugar
- 200g CrƩme fraiche
- 1 lemon
- 2 eggs
- 1 vanilla bean
You'll have to seperate the cookie from the filling. Chop the cookies as small as possible. Mix it with the butter and put it in your muffin forms as a base.
Mix the cream cheese, lemon peel, lemon juice, eggs, creme fraiche, sugar and vanilla bean and blend it with the oreo cream filling. Mix it with a egg whip but take caret hat you dont make it too fluffy. Put the mixture in your muffin forms. Take care that your forms are not paper forms but silicone. The mass is too liquid. Bake for 20 minutes at 170'C (338 F). Let them cool down and put in the freezer for at least 1 hour. Cheesecake should be served cool.

Vegan quiche
This is the first time I made quiche. It turned out quite well. Its just not stable enough to get it out of my silicone form :) But it simply had to be in form of a heart :)
The recipe is easy. For the base you need:
- 330g wholegrain flour
- 150g margarine
- 80ml water
-salt
mix it all well and put covered in the freezer for 30 minutes.
For the filling you can use whatever you like. I chose:
- soya yoghurt
- tofu
- spinach
- corn
- loooots of herbs, dried and fresh
mix the yoghurt with the herbs and grate half of the tofu in it.
Bake the pastry for 10 mintes at 200'C. Put it out and fill it with your yoghurt mix. On top put the spinach and corn and cover it with the other grated half of your tofu.
Put it back in the oven for 20 minutes. Low the heat on 175'C and bake for another 15 minutes. As I said, you can choose whatever filling you like. But take care that its not too dry!

Apple roses

My mashed potatos
I love mashed potatos. Especially since I got my dental brace :) I dont use only potatos but also sweet potatos. It gives the mix a little sweetnes and extra.
Hereis how i do it:
- potatoes
- sweet potatos (dont take too much, maximum half of the amount of potatos)
- milk ( or something similar)
- salt
- soft cheese
- butter
I cook the potatos in small pieces so its faster. You can cook both together or seperate. When theyre more then well cooked, put them in a big bowl. Add butter and soft cheese so they can melt on the hot potatos. Warm up the milk. Start mixing the potatos with a mixxer and add milk until everything is smooth. Than add salt and mix again. You can prepare both potatos like that together or seperate. Depends on how you want to present it :) Hope you like it :)

Salmon steak with oven potatos
Todays dinner. The salmon is just roasted in a pan and spiced with salt, oregano and dill.
For the rest you need:
- potatos
- butter
- salt
- herbs
- aluminium foil
- honey
- mustard
- dill
The potatos should be peeled and washed. Slice them carefully, but not all the way through. Put a small piece of butter in every second cut. Cover it with salt and herbs. Then wrap it in aluminium foil. Take care, that the open side is on the top. Put it for 30 minutes in the oven at 200'C. Then open the foil and bake for another 10 minutes so the top gets slightly golden. Done :)
I made some sauce for the salmon. It's honey, mustard and dill. It suits perfectly with the salmon.

Pumpkin soup
One of the best and easiest soups i ever made is pumpkin soup. One advice when you cook with pumpkins. They are very hard. Just wrap them in aluminium foil and bakethem at 200"C for about half an our. It hepls a lot! Here is the recipe i tried and which worked out really good. You can pretty much vary it depending on which ingredients you like:
- 1 pumpkin
- ginger
- 2 onions
- flour
- herbs
- vegetable stock
- cocnut oil
Cut the onions and roast them in 2 teaspoons op coconut oil. Slice the pumpkin in little pieces and add them to the onions. Roast it for a few minutes. Cover it with 2 tablespoons of flour and mix it well. Than cover it with hot vegetable stock and mix again. Cook it all together until the pumpkin is soft. A bit like a cooked potato. Add two small pieces of fresh ginger. Than you need to pureƩ it all together and put it back on the stove. Add herbs as you like and cook it slightly for another 5 minutes. Done :) Hope you like it as much as i do :)

- 180 g sugar (I chose brown cane sugar)
- 3 tablespoon baking powder
- 4 tablespoon cocoapowder
- 1/2 teaspoon salt
- 150 ml rape oil
- 250 ml soya milk
- white chocolate
Mix all the dry ingredients. Add the liquid ingredients and mix frequently, until the paste is smooth. Put one spoon of paste in a cupcake form. Than put one little piece of white chocolate in the middle. Afterwards add another tablespoon.
Put all your cupcakes in a 180'C preheated oven. Leave them there for 25 minutes.
Now enjoy your vegan chocolate cupcakes and let me know if you liked it :)

Super curls
If you want to have pretty, easy and fast curls, try the corioliss curler :) I love this thing! My hair is pretty long and heavy. But this curls last the whole day and always look good! Owl - vegan - glutenfree - cake
My secret hobby is cake decoration :) This is a birthday cake i made for my best friend last year. As you can guess she loves owls :). My one best friend is vegan and the other is gluten-intolerant. So this cake is gluten free and vegan! It was quite a challenge, but turned out well :) Let me know if you want the recipe :)

Red soup
My latest new recipe :) beet root soup with to´matos, onions and cream. Love the taste. It's like liquid red cabbage. Tastes a bit like christmas :) Sooo healthy and so low on fat!
